After hearing Sue give a live presentation, I knew I had to have her on the podcast. She has been researching, baking with, and sharing about whole grains since the 1990s. She is truly an expert when it comes to utilizing whole wheat in your home kitchen. In this conversation, we are diving into the history and politics of wheat production, the vast array of nutrients contained in a whole grain, how to seamlessly incorporate whole grains into your baking, and more. Lately, I have become convinced that I want to get back to feeding my family whole grains instead of white flour. I hope you find inspiration from Sue's message as well!

In this episode, we cover:

  • The troubling history of white flour in the United States and its connection to disease
  • The significant health improvements Sue and her family experienced as a result of consuming freshly-milled grains
  • Addressing some popular myths about sourdough, whole grains, phytic acid, and more
  • A dive into the nutritional benefits of whole grains
  • Inspiring testimonies of how freshly-milled wheat is transforming individuals' health
  • Looking at bread consumption through a common-sense and ancestral lens
  • Wading through the noise of dietary trends and keeping food simple
  • An overview of different types of grains and their uses
  • Does whole grain bread lose nutrients if fermented with sourdough?
  • Considerations when converting an all-purpose recipe to freshly-milled flour
  • Sue's tried and true hack for stocking your kitchen with freshly-baked whole grain bread every week
